One-of-a-kind restaurant group opens its doors

PLATTSBURGH | A hot new business has opened its doors, bringing new food choices to Plattsburgh. With a 2,500-square-foot production kitchen, Revolving Door Restaurant Group (RDRG) is set up as a quick-service restaurant. RDRG isn't your typical restaurant, though; they refer to themselves as "the restaurant of the future." RDRG operates on a takeout and delivery model only. All orders are placed online through their website or at the kiosk in-house. Initially, orders were only being accepted through their website, but after listening to some feedback from customers, who weren't as tech-savvy, the kiosk was added for in-house ordering. Walter Harriman, executive chef at RDRG, is responsible, along with his team, for bringing RDRG's three brands: Cheech, Chop, and Tabarnak to life. Cheech, the first brand of RDRG, is a rebrand of Cheechako Taco, a restaurant that used to be downtown. RDRG is one kitchen in which many different "restaurants" or brands, as they call them, operate. So, although orders for deliciousness are being placed from Cheech, Chop, or Tabarnak, the food being prepared is made by the RDRG. Harriman is in charge of all the food coming out of the three brands, and since RDRG doesn't use fryers or grease, Harriman is required to think outside the box when it comes to preparing the food. Everything is either air-fried, baked, or steamed. Inclusivity is also a top priority for RDRG; as a result, they have customization, or the build-your-own option on the menu. This allows menu items to be adapted for different dietary restrictions. In addition to being inclusive, RDRG also works to bring new menu items to Plattsburgh or to highlight foods, such as poutine, which are harder to find in the Plattsburgh area. Because RDRG is one kitchen that different brands operate out of, this allows them to create brands out of items that a single restaurant wouldn't be able to make a profit off of. This can be seen with Chop and Tabarnak. A restaurant that serves only salads wouldn't be able to operate on its own, as it wouldn't make enough profit, but since Chop, Tabarnak, and Cheech all fall under RDRG, they share the expenses, space, and resources. In total, RDRG would like to have six to seven brands, and if a brand doesn't work out it can just be revolved out just as the name suggests. Cheech and Tabarnak fans shouldn't worry, though; those two fans are sticking around for the foreseeable future. A fourth brand for the group is anticipated to launch this winter, and an exciting and unique brand will be joining RDRG in the spring. RDRG is a one-of-a-kind concept, and as a result, most of the technology they use, such as its Kitchen Display System, had to be custom-built to suit its specific needs. RDRG has also worked hard to ensure its brands are integrated to allow customers to order from different brands simultaneously. RDRG is card-only and is available for delivery or pickup at 34 Plattsburgh Plaza.
