Restaurant adds managing partners

MIDDLEBURY - Dale and Cindy Goddard, owners of Middlebury's Fire & Ice Restaurant have announced that Paris Rinder-Goddard and Chef Patrick Needham have been named new managing partners of Fire & Ice. After 36 years, Cindy and Dale Goddard have turned the daily operations of Fire & Ice and Big Moose Pub over to longtime Chef Patrick Needham and Paris Rinder-Goddard. Opened in 1974, Fire & Ice Restaurant, one of the original steak and seafood restaurants of its kind in Vermont, was established by Middlebury College class of '69 graduate Dale Goddard, Cheryl Rinder (Middlebury College '72), along with Adele Pierce of SS Pierce Food Company, and builder and architect/contractor Dutton Smith. While the quality food and eclectic decor will not change, Paris and Chef Patrick have taken the opportunity to update and add to Fire & Ice's traditional steak and seafood menu and include new offerings, from appetizers such as Wasabi Panko Tuna and Crab Cakes with Thai-Style Sweet Chili Sauce to dinner entrees like Roast Duck Breast with Vermont Maple Gastrique to Beef Tips Nantucket. Fire & Ice's Big Moose Pub continues to offer wraps, sandwiches, salads and burgers. Many of Fire & Ice's fresh fruits and vegetables, dairy products, wines, baked goods, maple products, salsa, beers, spirits and many other products come directly from more than 20 local Vermont suppliers. For instance, Monument Farms cream is the key ingredient in Fire & Ice's Maple Cr me Brulee, and the tofu in their new Pan Seared Tofu dish is made by the Vermont Soy Tofu company. Patrick Needham, a New England Culinary School graduate and Head Chef at Fire & Ice said recently, "As new Managing Partners of Fire & Ice, we are very excited to enter a new era for Middlebury's historic 'Destination Dinner House'. We look forward to continuing to serve our loyal patrons, while improving and expanding on what we offer our community." "We pride ourselves in doing whatever we can for our guests. A perfect example of this is longtime guests from Massachusetts who wanted to learn to prepare au poivre sauce. Chef Patrick invited them into our kitchen on a slower weeknight, and taught the husband to cook sauce au poivre. While the husband cooked the wife filmed, and is now on YouTube!"
